DESCRIPTION
History:
Vacqueyras was one of the first villages recognised for the quality of its wines; it was classified among the Grandes Appellations Locales in 1990. The vineyard is situated in the département of the Vaucluse, at the foot of the Dentelles de Montmirail range.
Soil:
Alluvial deposits with a glacial terrace.
Grape Variety:
70% Grenache ; 15% Syrah ; 15% Cinsault.
Age of the vines:
35 years.
Vinification:
Traditional with destemmed grapes, long vatting and controlled temperatures.
Ageing:
6 months in oak casks.
Yield:
35 hl/ha.

Colour:
Ruby red and limpid with violet hues.
Bouquet:
Notes of small macerated red berries, with a final hint of garrigue (Mediterranean undergrowth).
Palate:
Powerful and well-rounded, finishing on warm spicy notes

Fillets of mullet en croûte with basil
Croustillant of wood-scented saddle of lamb
Compotée of braised beef cheeks with Puy lentils
Serving Temperature:
14° to 17°.
