DESCRIPTION

History:

Our Saint Péray « Les Sauvagères » derives its name from the grape variety Marsanne thus named as it takes root in its wild (‘sauvage’) state in very hard granite soils. We only make still Saint Péray wine, and our first vintage was 1999.

Soil:
Our estate covers 1.50ha of granite soil covered with silt, loess and limestone debris (the harvest is completed by purchased grapes).

Grape Variety:
80% Marsanne ; 20% Roussanne.

Age of the vines:
Around 10 to 20 years.

Vinification:
Bunches pressed whole, followed by alcoholic fermentation in oak casks, 20% of which are new wood.

Ageing:

In oak casks for 9 months, with fine lees, which are stirred.

Yield:
40 hl/ha.

Tasting:
Colour:
Pale yellow colour, bright and limpid.
Bouquet:
Floral, fruity aromas and a final slightly buttery vanilla note.
Palate:
Supple well-rounded attack, and a slightly woody final note.

Matching Food and Wine:
Feuilleté of scrambled eggs with chicken liver and chives
Brill boudin with a tomato coulis
Picodon de l’Ardèche / roasted goat’s cheese

Serving Temperature:
10° to 12°.

Best enjoyed within: 
2 to 5 years.
