DESCRIPTION

History:

In addition to the existing Les Jalets red, Maison Paul Jaboulet Aîné is now producing this white Crozes Hermitage.

Soil:
Produced from purchased grapes; vinified by Paul Jaboulet Aîné.

Grape Variety:
100% Marsanne.

Age of the vines:
25 years.

Vinification:
Harvested by hand into 25kg crates, then pressed directly so as to minimise the danger of oxidation, the wines are vinified in casks for 30% of the blend.

Ageing:

Malolactic fermentation is carried out in barrels and stirring enables the lees to remain in suspension. For the wines in vats, this malolactic fermentation occurs in the vats.

Yield:
40 hl/ha.

Tasting:
Colour:
Bright, intense yellow .
Bouquet:
Ripe apricots, with honey and spice notes.
Palate:
Lively, floral attack. This wine is very richly balanced: its length gives expression to a toast and honeyed finish.

Fillet of pikeperch with braised cabbage
Picodon de l'Ardèche

Serving Temperature:
12°.
