DESCRIPTION
History:
The name of our Saint Joseph, red and white, comes from Victor Hugo’s “Légende des siècles” : in the 9th century, the Grand Pompée, faithful companion to Charlemagne, fought at his side against the Moors, on the right bank of the Rhône. A famous line remains from this battle: “And wine, that wine beloved of the Grand Pompée”.
Soil:
This 5 ha estate is located at Limony and Tournon, on a light soil of schist and gneiss on granite bedrock.
Grape Variety:
Syrah.
Age of the vines:
Around 10 to 30 years.
Vinification:
Destemmed, crushed, controlled alcoholic fermentation and temperatures; vatting over 3 to 4 weeks.
Ageing:
9 months in oak casks, 15% of which are new wood.
Yield:
35 hl/ha.

Deep ruby red with violet hues.
Bouquet:
Rich and concentrated nose of very ripe red fruits; sweet spices; Final liquorice notes.
Palate:
Harmonious and frank with rounded tannins.

Emincé of duck breast in a wild blackberry sauce
Filet mignon of veal en croûte
Picota of guinea fowl with red peppers
Serving Temperature:
16° to 18°.
