DESCRIPTION
History:
The name of Maison Paul Jaboulet Aîné’s Côtes du Ventoux “Les Traverses” comes from the walls which support the earth and protect it from the significant erosion in this region, where a strong wind, the Mistral, blows throughout the year.
Soil:
Clay and limestone.
Grape Variety:
80% Grenache ; 20% Syrah.
Age of the vines:
35 years.
Vinification:
Traditional vinification, controlled fermentation temperatures, long vatting.
Ageing:
Stainless steel tanks.
Yield:
35/40 hl/ha.

Deep garnet with violet hues.
Bouquet:
Notes of tart red berries, with a final note of pepper and liquorice.
Palate:
Powerful, fresh and well-balanced.

Cassolette of black pudding with cinnamon

Mignon de porc in a sweet and sour sauce
Serving Temperature:
15° to 17°.
