DESCRIPTION
History:
The name of this Côtes du Ventoux wine, 'Les Traverses', derives from the walls which support the earth and protect it from the significant erosion in this region, where a strong wind, the Mistral, blows throughout the year.
Soil:
Clay and limestone.
Grape Variety:
80% grenache blanc, 20% bourboulenc.
Age of the vines:
25 years.
Vinification:
In stainless steel tanks.
Ageing:
Short ageing, 50% in oak casks.
Yield:
40hl/ha.

Colour:
Pale and limpid yellow colour with brilliant highlights and pronounced legs.
Bouquet:
Very aromatic nose with floral and fruity notes.
Palate:
Distinguished, with a well-balanced freshness and a fleshy and warm finish.

Grilled sole with citrus fruits
Fillet of cod with gingered watercress purée
Chicken with grilled almonds
Serving Temperature:
10° to 12°.
