DESCRIPTION
History:
One of the oldest vineyards in France, developed by the Romans. In the Middle Ages, it is said that Seigneur Maugiron divided up his land between his two daughters, one blond, the other brunette, hence the names given to the wines: Côte Brune and Côte Blonde.
Soil:
2 ha of extremely steep, granite terraces, covered with a layer of siliceous limestone in the Côte Blonde and clay and iron oxide in the Côte Brune.
Grape Variety:
Syrah.
Age of the vines:
Between 15 and 40 years.
Vinification:
Destemmed, crushed and controlled alcoholic fermentation and temperatures; vatting for 3 to 4 weeks.
Ageing:
12 months in oak barrels, 20% of which is new wood.
Yield:
38 hl/ha.

Colour:
Ruby, limpid, bright.
Bouquet:
Fine and delicate, notes of violet, blackcurrant, blended with floral hints.
Palate:
Soft and velvety in the mouth, with a long, harmonious finish.

Ravioles de Romans with foie gras and chanterelles
Saddle and loin of lamb roasted with vegetables
Croustillant of mullet with olives
Serving Temperature:
16 to 18 °.
Best enjoyed within:
About 5 to 15 years.
