DESCRIPTION
History:
This estate is located on the top of the plateau, facing due south, near the little chapel of Saint Pierre.
Soil:
3.9 ha of vineyards on granite bedrock with chalk and silt-laden deposits
Grape Variety:
Syrah.
Age of the vines:
10 to 60 years.
Vinification:
Destemmed, crushed, controlled alcoholic fermentation and temperatures; vatting over 3 to 4 weeks.
Ageing:
12 months in oak barrels, of which 20% are new wood.
Yield:
20 to 25 hl/ha.

Colour:
Deep ruby colour.
Bouquet:
Spices, red berries and finishing with a liquorice note.
Palate:
Wine for laying down; distinguished, powerful and elegant.

Hare à la royale
Venison steak with bilberries, fried with mushrooms
Roast squab with thyme
Serving Temperature:
16 to 18 °.
