DESCRIPTION
History:
Maison Paul Jaboulet Aîné bought the Domaine Raymond Roure vineyard in 1996, from the family of the same name. It is situated in the commune of Gervans to the north of Tain l’Hermitage.
Soil:
3.5 ha on very steep granite south/south-west-facing slopes.
Grape Variety:
Syrah.
Age of the vines:
40 to 60 years.
Vinification:
Destemmed, crushed and controlled alcoholic fermentation and temperatures; vatting over 3 to 4 weeks.
Ageing:
12 months in oak barrels, of which 20% are new wood.
Yield:
30-35 hl/ha.

Colour:
Deep garnet red, with an attractive brightness.
Bouquet:
Subtle and delicate notes of small, tart red berries, mixed with sweet spices on the finish.
Palate:
Harmonious and complex, noble and silky tannins.
Matching Food and Wine:
Veal sweetbreads and kidneys with asparagus
Fillet of roast beef with parsley marrow
Casserole of red partridge with buttered cabbage
Serving Temperature:
16 to 18 °.
Best enjoyed within:
From 6 to 15 years.
